Turbinado Sugar

This sugar is partially refined, but retains a portion of the molasses. It has a subtle caramel notes.  

It can be exchanged for white and brown sugar, with potential adjustments to the liquid content in a recipe.    However the most common use of Turbinado sugar is the crunchy topping on muffins and quick breads.  It will give baked goods a special texture.  Suggest not using for whipped or mousse desserts because it is course.
